Mini-fest was FUN...

Morning All:

Well the 2021 Poolman Pat mini-fest was a BLAST this past weekend...most of us arrived on Thursday & stayed until Sunday morning...we didn't have quite as many people as in the past but we still enjoyed the good friends & good food...there were about 10 small or mini-max Eggs plus the motel's XL Egg...some of the gang under the "big top"...


As for our cooks we started Friday morning with the traditional Sausage/Cheese roll...


That afternoon I did some "Coco-not" cookies which went over very well (especially after everyone found out one of the ingredients was instant mashed potato flakes)...


For a pre-dinner item we did roasted root veggies (carrots, parsnips, fingerling potatoes, sweet potatoes, red & golden beets plus garlic)...nice change from all the meat...


The protein was the Shrimpburgers...


Saturday for brunch was the Ham/Swiss/Asiago roll...


and sliced...


The cookies on Saturday were Oatmeal Chocolate Chip...


Poolman Pat had cooked a turkey & Kathy used some of it to make a turkey pot pie...with the vent holes showing "T S" for Tuckaway Shores...


and the pot pie being served...


Can't wait for next year!!!

    Not very many unfortunately...in addition to Poolman Pat, there was Tom (Rusty Rooster if I remember correctly) & Karen Chamberlain but that was about it for the "old timers"...hopefully next year will bring some of them out of the woodwork.

    I believe this is Jay's recipe:

    Sausage-Cheese Bread Roll

    Ingredients:
    1 -- 1# loaf frozen bread dough, thawed
    1 -- 1# breakfast sausage (Jimmy Dean Sage is our favorite)
    8 to 10 oz. shredded cheese (we typically use cheddar, but anything is good)
    2 eggs (raw, used as a binder for other ingredients)

    Preparation/cook:
    Roll dough into approx. 12" x 15" rectangle. Cook sausage. Mix cooked sausage, shredded cheese and eggs. Spread mixture on bread dough. Roll dough with mixture inside like a jelly roll and drop into a greased (Pam spray works also) bundt pan. Let rise in warm area until puffy (about 1 hour).

    Egg setup is with platesetter (feet down) at about 375 dome temp. Place bundt pan on platesetter and cook until top is golden brown (usually about 35 to 45 minutes). Invert bundt pan onto cutting surface and then brush butter on all sides of bread roll. Slice and enjoy.

    We quite often do the prep and assembly the night before and leave in the bundt pan in the fridge, covered with a wet towel to keep dough from drying.  The next morning take the bundt pan out of the fridge before starting the Egg.  By the time the Egg is ready and stabilized the dough has warmed up and risen some.

    For the Ham/Swiss/Asiago roll substitute one grilled ham slice (I usually use some Dizzy Pig Pineapple Head rub on the slice when grilling) for the sausage and 6 ounces of shredded Swiss cheese & 2 ounces of shredded Asiago cheese for the Cheddar cheese.

    Boy…had I seen even one can of grape juice then I would have known you were there!   How dated is that comment, John? LOL

    Just to show how dated my comment is I’m pretty sure the late Car Wash Mike coined that frazz toward John (Egret) say maybe 18 years ago!

    Actually, it was my dear friend Evans Tabor (Chubby) who coined that phrase that, apparently, will never go away. Car Wash Mike was all in as well......we were touring NAPA and Sonoma Valleys on a wine tour with the Tabors and I was having a hard time finding a Cab that I liked.....we also toured a chocolate factory and the attached photo shows the great one all decked out and ready for the tour !!
