If those are actually inlaid and are actually cutting boards then I would never let a knife close to them!
So for a brisket, much less any large slab of meat then if you want to go nice, but reasonable check into Boos boards…or if you are a wood butcher yourself you already know how to make a killer board that might be a hand me down for generations! -
I put cutting boards in the same group as pocket knives. Get one too nice and you'll hardly ever use it. Buy one that is just nice enough where you won't be scared to use it.

I have three wood cutting boards. Only used for cooked protein. A small edge grain (think flatiron, pork tenderloin or bavette steak size) and medium end grain (14"x18") that is perfect for ribs and briskets no larger than 12-13 lbs and a large edge grain 18"x24") that is for the big cuts.
Can't imagine any knife cuts across that skill set and art work.
No way I could justify an inlaid board but applaud those who do.
Just my opinion and we all know what those are worth. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
The a above photos are actual boards and can be used for cutting without damage to the art. Amaizing work. See video.

Not inlaid but just oiled up.
I made the mistake of putting a foil pan right off the egg onto it a few weeks ago. The stain is mostly gone. Oil helps.
Pro-tip: don't do that.
Just finished the Hatori Hanzo video. Amazing.

Keep ‘em oiled! I use mineral oil a lot, but am considering switching to pure tung oil, so long as it doesn’t plasticize too hard. Gotta test board here. I’m expecting it to be fine.Beautiful work up there!Large BGE and Medium BGE

you also dont get drink rings from alcoholic beverages with tung oil on the board so i guess thats a plus plus for some

Just make sure it's pure Tung oil and not a mixture with other polymerizing oils that may not be food safe.

I'm almost decided on ordering this router. it would give me the mechanical ability to do cutting boards like the ones featured in this thread.

this tung oil darkens the board and has a citrus solvent to get it to penetrate deeper into the wood. i like the look of the finish
