6 rounds of seasoning carbon steel

What would be a few good 1st cooks on this?

    Onions. 

    Cheap first cook. They have a little sugar though so expect a little to be left behind.

    I don't think so. What will be left behind, if anything will be sugar that will contribute to "seasoning" in my opinion.

    My suggestion was also because the first food to hit it might pickup some of the seasoning, and that may or may not be flavor you want.

    Or just cook some paella and call it done.

    I'm hungry :D

    Pork tenderloin mignons with coffee rub, a pat of butter on the mignons during the rest.

    onion is supposed to pull some of the metallic taste in a cs wok when first seasoning it, i dont think it will hurt anything. maybe start with onion burgers

    That's not a paella pan. It's a flat disk. How you gonna get the rice cooked?

    Gonna get hot if you leave the dome open while cooking.

    I appreciate the vote of confidence, but I've never made paella before . . . leaning toward onion burgers right now

    You can finesse paella on a good even heated relatively thin pan.  Once you give it a go (and likely miss the finish) you will go again and again.

    The rice would cook fine.  It's everything else that will roll/pour off to the sides, and slip beneath the disk, to be, uh, smoke.  :sad:

    Here I was thinking the limber holes were high enough to make it a possibility.  I did not apply any dimensional analysis.  I will leave the end-game to the chef who has skin in the game.   B)
