Made Enchiladas again. Already had roasted hatches in the freezer so the whole thing came together from scratch, other than the tortillas I guess.

The gardeners showed up right as I pulled the chicken off the grill. Gave them each a leg quarter, two corn tortillas, a topo Chico, lime and a cup of homemade red salsa.
Kept the white meat. Shredded that while still warm, put in a glass Tupperware. Back in fridge.

Did you use just straight cream or was that a cheese sauce? Wasn’t sure if you were just putting the cheese in the enchiladas. If you did a cheese sauce I’d be very interested in the details.

It starts with straight cream, then you layer in the enchiladas (no cheese inside the enchiladas), then you put cheese on top of the enchiladas (straight shredded Monterey Jack). The cheese on top melts and forms a sauce with the cream.Plymouth, MN

These look killer. Bought all the stuff today with minor tweaks to the recipe. I like that these aren't sour cream chicken enchiladas which I don't care for. Will be cooking them tonight.
