suggestions and opinions on multi-rack setups for a Large

Hoping to get current info and opinions on the multi-rack setups for a large
I have 2011 vintage platesetter, the original grate and an BGE pizza stone and my fire ring is completely even all the way around, no indentations for the platesetter legs.
I'm looking for more space to do cut up chicken pieces, or more than one spatch **** chicken, and also a way to get the pizza stone up higher into the dome for cooking.
my family is looking for a "wishlist" from me for an upcoming birthday.
I've searched a bit and find older info and there seems to be more options now. I've started to form an opinion but rather than post that I'd like to leave it open ended.
There is no requirement for the current items to work with this.

my setup is an adjustable rig with the spider and stone bundle which puts the indirect setup even lower. adds alot of space in a large egg. you can call the ceramic grill store and talk to tom, tell him your needs, he doesnt oversell but will recommend things to consider. the spider comes in handy for a wok setup. i like the rig as its handy to remove the whole setup with food for removing butts, turkey, etc

I have the CGS PSWoo with extension rack and over the weekend I cooked a couple full racks of ribs and 4lbs of pork belly burnt ends on it no problem.

CGS. I have the Adjustable Rig, Spider+stone bundle, and the extender. I use them all. I hardly take out my stock platesetter any more.
An idea how I use this, potatoes at grid level, Adjustable Rig plus oval grid, run a spatchcock chicken up top.Plymouth, MN -
I have owned the adjustable rig, big green egg eggpsander 5 piece, and the woo. I gave the adjustable rig away and kept the other two for my larges. The adjustable rig is fine, but its so configurable, that its just a little more fussy compared to the other two. Day to day cooking the eggspander and woo are hard to beat.
Picture of all 3 on the day I got the eggspander. Its just a touch dirtier now.

My kids gave me the ps woo combo for Christmas.
Worked well for 3 slabs of back ribs laying flat. Pic below only had two slabs on.
