I catered my own wedding party last weekend.

We served pulled pork.
I used two Large Eggs and an old Cookshack electric (multiple batches) to
yield roughly 70 pounds (preparing for 1/3# per person). I cooked ahead of time, bagged and froze
it. We thawed it a few days ahead and
reheated that day with a finishing sauce.
Random notes & lessons learned:
My pulled pork yield varied widely. I learned to be conservative and figure just under 50%.
It hurts a little when you spend all that time on pulled pork and people comment on your slaw dressing instead.
Local bakery staff give you a blank stare when you order 400 slider rolls but no one gives you a second look when wheeling 4 sheet cakes, a cart full of fruit & 30# of slaw mix out of Costco. Weird.
I knew I would not have enough refrigerator space. I bought a Craigslist fridge (which naturally didn’t work as advertised) and scored another freebie.
3 temporary commercial air conditioners keep my shop cool … right until you fill it with 100 people.
And because I didn't have any pics of food or Eggs in my post, here's my new granddaughter after playing in the rain/mud:

Thanks everyone. We were married back in April when gatherings were restricted and decided to throw a party for a larger group. We planned to feed 200. Around 150 showed up.
After all that work I told her we would never host a party again. And then a friend gave us a 50 pound roasting pig as a wedding gift. So much for that idea!Glencoe, Minnesota -
