Penne alla Vodka with Smoked Pancetta and Grilled Chicken

Made some pancetta last month and used about half of it for pizza toppings. I had about a 1lb hunk of it left and thought it would be interesting to smoke on the egg with some pecan wood. Took it to about 165 internal and chopped it into smaller cubes and crisped up in a pan as the base for the vodka sauce. Used that as a base ingredient for penne alla vodka and threw some grilled chicken in the mix for some extra protein. Took to the in laws for Sunday dinner. Good eats.
