Do these have the fat cap on?https://eggheadforum.com/discussion/1151179/round-2-picanhaI egged some a while back. Very simple, but very tasty. Can’t seem to find the cut easily around here, otherwise I’d do it more often.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX.

One of my students is Brazilian, and he has cooked some for us.
My recollection is that he slices it about a 1/2 inch thick, applies coarse salt to both sides, then grills it hot and fast. It’s delicious that way."I've made a note never to piss you two off." - Stike

@JohnInCarolina 's method is the way I go with that cut. I know there are other options such as skewering and then cooking but the above hot and fast works for me. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

I got one back in February from a market in Lincoln. I cooked the entire roast indirect, and then cut slices. Served it with bread and chimichurri sauce. It was good, but it was more than my wife and I could eat in a couple of days.
I’ll do another one, but this time I’ll slice and skewer like in this picture. More seared edges, more flavor. That fat cap is legit. I’ll also make sure to invite more people for dinner.

I did one the other night. May have seared a little to long but the bark was great. I know the fat cap can be off putting to some, but you need to take a small bite, it'll melt in your mouth.
