Cherry smoked mutton shoulder ... and a perfect wine

I was planning on cooking a cote de boeuf again tonight, and did acquire one from the butcher. The plan was to post numerous pictures, thus causing much salivation from @lousubcap. However the plan changed upon discovering that the butcher had a lovely looking mutton leg in, so that bumped it's way to the top of the list. Smoked in the MMX for around 3.5 hours at 275F until IT was 150F. We had this with a 1999 Domaine d'Arlot Clos de Florets ... this was absolutely perfect with the food. Fully mature, loads of fruit and a spot on match to the smoked mutton.

    @Stormbringer - Great audible right there.  Salivation was successfully achieved with the above cook.  Great finish.  Keep bringing 'em.  Dang!

    Good looking mutton!  The town I live is known for BBQ mutton and yours looks just awesome.  For more ideas, google: BBQ mutton Owensboro KY.  I'm not in anyway trying to downgrade yours, it looks very moist, tender and not greasy, taste is in the taste buds of the beholder.  Like I tell people about cooks that I feel good about, it might not be the best, but it's as good as the best.  Multiple tie for the best in most things cooked.

    Really looks good. I've never had mutton. How is the taste? Does it have a gamey flavor?

    Stolen from the web:  Generally speaking, lamb is a more tender and delicately-flavoured meat. Mutton is a rich, slightly gamey cut with bold flavours which mellow and deepen when slow cooked. The cuts themselves tend to be larger and darker than lamb too.

    Thanks! I did some research on Kentucky BBQ a few years ago, this is a good article https://www.thespruceeats.com/owensboro-mutton-barbecue-331595. The history of it in particular. I've found some new ideas from a couple of articles in the search you suggested.

    Cheers bud. Best way I can describe it is a cross between the flavour of lamb, with the deeper flavour profile of beef and the texture of venison. It's a great cut of meat, and in the UK very good value for money. It's less than half the price of lamb.
