Friday Night Stuffed Flank Steak

Tried something new last night, got motivated watching an old episode of Bobby Flays boy meets grill. 

Stuffed flank steak stuffed with Proscuitto, Fontina and fresh basil. Marinated for 4 hours in some Cabernet with garlic, olive oil, shallot and black peppercorns. 

Cooked it at 500 direct for about 5 minutes a side, wasn’t sure it would cook all the way through but it turned out fantastic. Made a toasted walnut, baby arugula, watermelon and feta salad with a balsamic reduction and some roasted baby golden potatoes.
