I asked the butcher to leave whole instead of the normal cut up pieces.I plan to braise in red wine and a bunch of herbs and spices, served with a side of mash potatoes and peas on the side.. More to follow

We held it over for tonight’s dinner.. It was insanely good.Not sure doing whole as opposed to cut up was an advantage, but still was super delicious!!
