Gebby's Burger knock off (Peoria, IL)

I posted this knock off recipe clear back in 2008 on the original BGE forum. Once again tonight I made them and decided I ought to run my recipe up the flag pole again. The ONLY change I have made was to add a thin slice of tomato to each finished burger. Like I say on down this thread...HAIL to the Gebby Burger!!!

There's a local family restaurant in town named Gebby's. It's a homey place with a quirk in that it only operates one shift per day. It opens at 6:00 AM and closes promptly 8 hours later at 2:00 PM. Something I love from there is called a Gebby Burger. I finally decided this isn't rocket science and I'm now duplicating them at home on my BGE.

1 Starting with a 1/3# patty I wet it with Worcestershire,
2 Then add a sprinkle on Dizzy Pig's Cow Lick Steak Rub and some garlic salt.
3 Egg for 4/4/2 at 400°
4 During the last 2 minutes I add a stack of cheeses consisting of 1 slice each of American, Swiss and hot pepper.
5 Top with grilled onions and dill pickle slices.

 That is one delicious hamburger IMHO!!! That blend of cheeses may sound quirky but it works!

HAIL to the Gebby Burger!!!

    Yes! 3 slices stacked on top which gets melted together. Here's what I said...I add a stack of cheeses consisting of 1 slice each of American, Swiss and hot pepper.

    Well... I need one cuz I'm just not grokking how to assemble that sort of stack.
    Should the cheeses be stacked alphabetically (ascending or descending)? Nation of origin? Are all the layers aligned to create smooth edges or should each layer be rotated x-degrees so you have neat little triangle "flaps" showing?

    I appreciate the Heinlein reftence.  I imagine they are fanned out so from above it would look like a 12 pointed star.

    can anyone suggest a good swiss cheese, i get zero flavor from the over the counter supermarket versions. would the blocks in the binns be better, is there something i should be on the lookout for.

    Most deli counters will let you sample something.  I would just ask them for a sample of their strongest swiss, and see if it appeals to you.

    Personally I really like Boar's Head brand Baby Swiss slices. More pricey, but I use it a lot.

    no samples since last spring but i buy a pound for dad weekly. i get the sharp lately but for me its extremely neutral. maybe a gouda or munster would work

    I'd probably just get a block of gruyere and ask them to slice it.

    thats not good, this ones in the andovers and its probably tricked out to the max.  every time im up that way i look around the parking lot to see if my car is the oldest, it always is unless leno is in town

    actually go there for grillo's pickles for burgers. i think thats all ive ever bought there.
    If it's more convenient for you, it looks like Stop and Shop sells Grillo's.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I didn't think swiss was supposed to have any flavor; I never buy it and even forego it on a cheese platter.

    I was just about to suggest this. If you can't find a swiss that you like, try something else in the case. If you like one, they're likely to have it stock regularly. 

    Randomly discovered a couple of years ago, that a grilled cheese with muenster was pretty tasty.
