I like treating the ribeye as three steaks which it really is. It let's me cook the center leaner piece more well done for whoever wants it and the good pieces rare. To be honest this is all a bit more rare than I wanted but totally fine for me.

Dressing is lime, fish sauce, soy sauce, garlic, thai peppers, brown sugar, lemongrass, mint and some mortar/pestle action that I missed.

The sauce on the side is really for the sushi from earlier but it's one of my favorites with anything. Soy sauce, garlic, peppers, cilantro.

Asian food has made me turn around my opinion of msg too. There was none in this but worth a mention.

This has enough savory with the really good beef and fish sauce.
