@Legume I know right I'm guessing the Mexican market that I go to has one of those because the cut seems similar on their Al Pastor.2-XLs ,MM,blackstone,Ooni koda 16,R&V works 8.5 gallon fryer, express smoker and 40" smoking cajun

I love the story, and the approach to the pork is very different. Would be fun to try for sure."I've made a note never to piss you two off." - Stike

That had to have been a thrill when the one gent went back to the Phillipines, and saw their idea had inspired others back home.

Oh my. Thank you for sharing. My mind is blown, had no idea you could do pork butt like that! That is definitely going to be tried in the near future.
I would rather light a candle than curse your darkness.

My wife is from Pampanga. Lots of good dishes from her and her family. Not one recipe written down.
Traditional Sisig with pig ears is really good. I'm still trying to find a good source for those.
This seems like a pretty good traditional recipe

This version of sisig skips the boiling and uses pork belly. It should get you into the ballpark for the flavor.
