Looking to duplicate this dish for Valentines Day from a local place that I love.
FILET NAPOLEON
Grilled filet mignon, served over Parmesan risotto and asparagus topped with Carolina crab cake, bearnaise and balsamic reduction.
I’m good on cooking the steak, crab cake and the asparagus but need some ideas/help on the Parmesan risotto, bernaise and the balsamic reduction. Never made any of those before but I love this dish. Any thoughts?

Risotto is pretty easy. Get some arborio rice. Heat some chicken stock in the stove in a separate pot (you want to add warm stock while you are cooking). Toast the rice in a dry pan for a minute or two, then add some butter and white wine. As that cooks off, add chicken stock, about a cup at a time while stirring the rice - as the rice absorbs it, add more. After about 30 minutes it should be nice and creamy. Then add your parmesan (a good bit, since that is your main flavor) and stir to incorporate. Add S&P to taste (although watch your salt at the beginning because the cheese will be salty). You can add some cream if you want, but it's probably not necessary.

Here is a recipe for risotto that I’ve used with some success. https://www.thespruceeats.com/pancetta-risotto-recipe-995999I don’t think the technique is that difficult, just be aware that the risotto is going to require all of your attention for the time that it takes to cook and in my experience, it’s more like 45 min to an hour. You’re going to be standing over a hot stove and ladling hot chicken stock and stirring rice for the better part of an hour, and you can’t walk away. It can make the timing tricky if you’re trying to get steaks off the grill, crab cakes cooked etc.

As others have said, risotto just takes some time to make but it’s worth it. This is the recipe I use from Mr. B’s. With this recipe you need to stir it frequently, but it is pretty simple. I add mushrooms since SWMBO likes them and I have used jasmine rice too since I had it on hand.

been known to just use a knorr package for the bearnaise, with this cook though i might add a little fresh tarragon to the knorr

Nothing in the kamado due to all the rain today but the meal turned out great. Filet, risotto, crab cakes, asparagus and bernaise were all great. Only thing that needs work was the balsamic reduction. It was good but didn’t thicken up enough. Great valentines meal at home though without having to fight a crowd!
