Smoked Chucky

I got inspired by a post I saw about smoking a chuck roast. I LOVE me a good brisket but they are a little on the pricey side and do take quite some time to cook. The "poor man's brisket" seems like an excellent alternative.

I set out to Kroger yesterday and immediately knew I was destined to attempt this recipe. There were signs everywhere. Chuck roasts were on sale for $2.99/lb. I bought a good looking, 3 pound roast for under $10, originally $25. Winning!

I rubbed it down with Kinder's Woodfired Garlic



and let it sit overnight in the fridge.
This morning, I topped it with Kroger's Private Selection Espresso Spice



and I am letting it sit on the counter until I am ready to put it on the Egg. 



It is now on the egg @245º with some pecan wood. I am going to let it get to 150º or so internal and then wrap it in butcher paper.
