Wife loves my timing

So my birthday is on the 19th and my wife wanted something to go with her world famous mac & cheese. So at noon today on threw on a 8.5lb pork butt. Well it is 1:30am and just went through the stall, now 167 and climbing. Told her I would be done around 11pm. Her comment was, what ever you tell me I need to add at least 4 hours.
Needless to say, by the time I finish and hold in the cooler for an hour the sun should be up.

My wife has the same rule but for 3 hours. Good to know it isn't just my poor timing. Enjoy the cook.

. When I start a long cook, everyone just goes about their day, knowing it will be done whenever.

My wife has mentioned a similar issue with me. She says I need a solid 90 minute window on either side of the planned finish time.
However, I reminded her that (because of her) I normally pad any departure time by 30 minutes.
But being hungry is worse than being late, so she wins.LBGE since June 2012

May I suggest Turbo? I had an 8lb butt yesterday that finished in about 4 hours using this method.

Mine was 10 minutes late to our wedding. no jokes. Blamed it on her bridesmaids. She can only be on time for things that are directly for her.As for long cooks, I start early, can always warm and hold in the oven. I also cook all of the side dishes so that we eat when it’s ready
