5 Plus 1 Cedar Plank Salmon and Baby Potatoes
I don't post many cooks, but this one is so easy and good that I wanted to share. There are plenty of Salmon recipies already posted, but this is by far my favorite.
The marinade is simple. 1 TABLEspoon of five ingredients: soy sauce, honey, brown sugar, melted butter, and olive oil. Plus one clove of garlic minced. I marinade the salmon filet for an hour in the above mixture, then I coat the salmon filet with the leftover mixture and place it on a cedar plank. Grill direct at 375° - 400°F until the IT of the salmon is 140°F. The salmon will be flaky and moist! I added a little "extra butter" below because I couldn't remember if I had added butter to the marinade.
While I am preparing the Salmon, I like to roast some baby potatoes in EVOO and S&P in cast iron. They take about an hour, so while the salmon is doing it's thing, I can get the potatoes ready.
Here is the plated shot. The salmon couldn't be tastier and the potatoes are a bonus.
