Simple 3lb gammon joint, coated in a 'rub roulette' from my library of pots - mainly sweet but a bit of heat too.
Cooked to 75C internal, foiled for 30 minutes, soft as butter.
Still experimenting with MMX set-up. Used my trusty smoke tin with chippings from an oak we trimmed in March, dried in the garage since.

Simple dish sweet potatoes, celery, carrots, onion pureee - made it a few nights ago but altered it some. Added Carolina reapers, roasted green chilies and went non vegetation with some carmelized chicken and apple sausage diced thin. Served with sliced scallions and some crumbled cheese for from the local Middle Eastern grocery store.

Protein loading for a 7 day backpacking trip. Made Mongolian Beef w/broccoli and fried vermicelli rice noodles. Honestly, broccoli was best, roasted in oven before tossing in with stir fry. (Used the stems too, sliced thin and done like confit)

It was freshly grated Monterey jack. I put a light drizzle of enchilada sauce on top before the cheese. The tortillas get too soggy with sauces on top even after frying them. I was thinking about doing a sauce as a post cook topping next time add some depth to the flavor profile.caliking said:@DoubleEgger - those enchiladas have been stuck in my head. We usually use a short wire rack to raise the plate so the steam from below is not blocked, when away and in a pinch we use foil balls instead. Tonight swmbo came up with the idea of broccoli stems, worked a treat.
It's hand extruded beef balls btw.

Needed an easy dinner so made huevos rancheros with some andouille sausage. Cooked the sausage, removed from the pan and reduced a can of Rotel spicy tomatoes and poached the eggs in the reduction, put that on top of some refried beans, then everything was topped with queso fresco, sliced green onion, and a chipotle cream salsa.

I have a story about Seagrove... the last time we were at ButtBlast, SWMBO wanted to roam around Seagrove. Stopped for lunch at a mom 'n' pop joint. Woman, one booth over, looks unwell, and did a faceplant in her soup. Came this close to starting CPR. EMS arrived, and knew her on a first name basis. Our lunch was spicy kimchi hotdogs with a soy glaze. That is why they call it fishing not catching 🤣, DH caught a nice legal bass today but we tossed it back because it was not enough for a meal.
