The timing is great as I just purchased a Santa Maria Grill. Once I get marginally comfortable with true live fire cooking beyond my Boy Scout memories/tragedies of around 60 years ago a big objective going in is to cook a brisket on it.
I have a weber kettle cover to help with the the conceptual approach. That cook will be epic on its own front. Likely a few weeks downstream-and yes a commodity sacrificial brisket for the adventure. Enjoy the self-created challenge/adventure.

not everything is a good deal, so good idea to still check camelcamelcamel and look around before pulling a trigger. Also keep in mind lots of their stuff is refurbished or open box______________________________________________I love lamp.. -

Back before Woot got purchased by Amazon I bought a 6 pack of mechanical nose hair trimmers for 2 bucks and their 5 dollar flat rate shipping. I waited the month or so for them to come from China. I was going to give them away to a few friends maybe. I stuck one up my nose and squeezed as instructed. It made half a rotation. I let go and it stayed. I had to rip out my nose hair. All six made it from China to the trash in a month and a day. Since being purchased by Amazon you don't find those kinds of things. Thankfully in this situation.
