30LB bird vs Large big green egg - Help!

OK - found a farm nearby that was selling turkeys.  actually claimed a bird this past march.  They slaughtered them yesterday, dressed them, etc and I picked up last night.  I got a 30lB bird!!  not sure what to do now!  I have a Large Egg and I like to do the spatchbock cook but not sure what to do now as I dont think it will fit on my large egg.  Suggestions???

    Break it into quarters or halves.

    That’s a big bird! Debone it or do halves. You still may be hard pressed to fit a half on a large.

    Do you have to cook it on the egg?

    I would cook that one in the oven and buy a smaller one and cook it on the egg.

    Just cook the Turkey in the oven and cook appetizers on the Egg.
    Nothing wrong with a good oven cooked bird.

    Brine it in a plastic bag and then place the bag in a cooler packed on ice you should be good for like a 24-48 hour brine with a couple bags of ice.

    You could try a test fit by removing the fire ring and going indirect off the fire box but don't get your hopes up.

    Convection oven on roast mode for that monster bird. Can't beat it.

    Will it be tough?   Seems like it will be really old by Turkey standards?  Please post some pics and reviews after your cook.  Never heard of a turkey that big lol

    I didn’t weigh him but Brooster was probably close to that when we did battle in the 90’s. He had undisputed reign over his harem out in the pasture for 2 years . The problem is some of those hens were his daughters so he had to be replaced. 
    He had seen me come many times, always for one of his young competitors. Imagine his shock when my net landed on him! I then dove and grabbed his legs. Most of the fight is a blur but eventually his feet were tied to a branch on the Apple tree and he was hanging upside down. After the deed was complete I found my right bicep was one big bruise.

    Agreed on the brining in a cooler. I did one in South Carolina (not too cold) and added plenty of ice and monitored the temp. It stayed below 40 all night.

    You could cut it in half and do one in the oven and one in the Egg and compare them.

    FWIW, bge's website claims a large will handle a 20 lb bird. I assume they mean whole, not spatched. I vote for the oven, assuming it'll fit.

    I've never brined anything, ever. To my knowledge, I've never even eaten anything that was brined - for sure, nothing in my family.

    Skip the brine, use your oven and be careful not to overcook. I'll be fine.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Mad Max is awesome - here's one of Max's birds (egged, of course). I did a Max bird years ago in my Mom's electric oven. I screwed up the gravy, but the bird looked very much like this one and tasted great!

    If you can't get the Dizzy Pig rub in time, I saw Max's original recipe (w/out DP) Posted on here a few days ago. I think @fishlessman posted it.

    Cook thighs in Oven and rest of bird on the large BGE ... you'll get best of both worlds, and can still make your mad max gravy!

    You're looking around 6 hours. I'd start checking a little earlier but plan on somewhere between 6 and 7 hours.
