    I found them at the local butcher. Not sure what the going rate in the rest of the US is, but here in Oklahoma, I paid 51 dollars.  Didn't seem to bad for brisket on a stick

    Thats what I am leaning towards as well Shtgunal3.  I generally wrap my briskets, but the ribs are just too purdy to wrap =)

    Yep.  They definitely suffer from shrinkage.  It sounds like you got a reasonable price.  I usually pay $9.99/pound at my local butcher for choice beef ribs like that - and with a 3 rib rack weighing about 6 pounds I count on $60/rack.  On the other hand, I'm currently cooking a 19.2 (pretrim) prime brisket that I got for $2.99/pound - so $57 and change.   That doesn't make it a better choice necessarily because it is so much more work to cook a brisket.  I usually opt for the ribs like yours.  They look great and hopefully won't shrink much more.

    They look great RD usually has them for around 8.60lb, They do shrink alot. I start the toothpick test around 195

    I have a hard time finding beef ribs like those, but every time I find them, I snatch them up.  A true treat, brisket on a stick.  The cook looks great.  Enjoy.
