Alder smoked brisket chilli

Myself and SWMBO had a great east coast USA tour last year. As part of it we visited Great Smoky Mountains NP, staying in Gatlinburg. There's a few BBQ places there, the stand-out being Calhoun's. Their Tennessee brisket chilli was amazing, so we tried to emulate it when we got back home. Turned out pretty damn good tbh, recipe in this link:

I have an almost full bag of alder chips (heard it great with fish) but prob wouldn't be to practical for a long smoke
