Bacon jam

First time making this and used the big clock box in the kitchen but planning on topping egg cooked burgers with this wonderful concoction.



Thick cut bacon diced and cooked. Onions and shallots caramelized in bacon fat. Brown sugar, Apple cider vinegar, bourbon maple syrup, garlic, and red chili flakes brought to a simmer and reduced down till a sticky jammy baconey goodness arrives.
