I haven't cooked a Brisket in about 6months. Decided to cook one this weekend.

12lbs trimmed Prime from Sams Club.
S&P Rub.
Cooked at 250 with Hickory for 11hrs.

It turned out a little over the edge on end pieces of the flat but the thicker parts of the flat and the point were good. Will use what's left to make Real Deal Holyfields and Brisket Quesadillas this week. Ill try to take pics of that if I remember. Any who thanks for lookin.
