SV Tri-Tip

Generally speaking, no where around here carries tri-tip. Found a couple at the local Walmart and snatched them up. 

Coated with DP Redeye Express, then spritzed with canola oil before being bagged and left to sit overnight in the fridge


Processed SV 9 hours @ 133F until tender to the pinch-test, before being shocked cold in an ice bath. 

Seared at 650F for ~3 mins a side on the MiniMax. 

 

Sliced and served with a simple seasoned rice and sautéed Zucchini and Yellow squash.

    Looks good. I like the idea. I wonder if your slicing technique needs a slight change? I just cooked one myself and noticed the grain "switches" at about the middle part of the kidney shape.
