Sambal Chicken Skewers and Asian Ginger Dressing

A quick Friday night dinner.

Asked my wife to get chicken breasts from Costco.  She came back with a huge bag of frozen Tyson breasts.  :(  So that is what I will be cooking for a while.

Sambal Chicken Skewers:

Served with rice and lettuce.  I loved the flavors, and my wife and daughters cleaned their plates, with no left overs.
