SRF Wagyu black grade flank steak. 2 pounds.
Lightly seasoned with Kosmos Cow Cover and Cattleman’s 8-Second Ride Carne Asada seasonings.
Set the LBGE for indirect at 250° and smoked the steak until 110° internal. Pulled steak. Opened egg up to 550° direct. Seared each side for 60 seconds.
Internal temp was in the high 120’s on the thick side, and mid 130’s on the thinner side. Pulled to rest, and the rest is history...
