Saturday Supper

I ran across a deal on some t-bones and ribeyes from a local farmer so I came home with about 40lbs of steaks for the freezer. All look like this 



This one was destined for supper so it hit the SV @ 132 for a couple hrs with salt and a rosemary sprig. While the small was heating up I cooled the steak with some ice water 

Gettin the sear on 


Restin a bit 


And ready to eat with a side of cheesy tortellini with a garlic oil and fresh basil 


Two of us ate on this thing and still had leftovers for munchin later.

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
    "Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

    Hmm i have lots of basil growing. Never thought of garlic oil and basil tortellini. That steak looks amazing. Thanks for the idea.
