Leftover Pulled Pork Enchiladas
Battleborn
Posts: 3,543
Had a pretty good amount of pulled pork left over from yesterday's festivities. Enchiladas are always a favorite in my house. Made some enchilada sauce.
Heated the pork up with a little chicken broth, orange juice, lime juice, cumin, DP Mole and some green chilies.
Let that reduce down and stuffed the tortillas with that and Monterey Jack. Into the pan and top with the sauce and cotija. On to the grill until bubbly.
Easy leftover dinner. Now just waiting until its done.

I love enchiladas, but don’t make them nearly enough. These look terrific.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX.

Enchiladas can be such a deceptively delicious meal - especially when you have first class ingredients as you have done. Looks fabulous.Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

Thanks all. The sauce is what really makes these outstanding. I use this as the "base" recipe and change it.

I used New Mexico Chili powder and added a few other spices to kick it up some.Las Vegas, NV -
