Dutch Dutch Baby...not egged

This morning we were wanting something a little different for breakfast...so Dutch Babies got the call.   They aren’t fancy, but boy are they good.  Little Chef likes her’s covered in chocolate chips.  

The recipe Norah Grace used. Makes 2 
3 cups of AP
4 lg eggs
2.5 cups of of milk/cream (split equally) 
1/4c of sugar 
1/4t of salt

preheat cast iron skillets to 425. 
Once preheated melt 2T of butter in the skillet and place 1/2 the batter in on 10inch skillet and bake for 15-20 min.  

Anyone else love these?

    Funny. My wife made one for lunch. Served with candied apples and powdered sugar.

  • Never seen them done this way. We love Dutch babies but we have always done them in the oven.

    David Eyre’s (Dutch Baby) Pancakes

    From Craig Claiborne, NY Times, 1966

    Ingredients (12” pan, serves 2-4)

    1/3 cup all-purpose flour

    ½ cup whole milk

    2 eggs, lightly beaten

    Pinch of nutmeg

    4 tablespoons (one half stick) of unsalted butter

    2 tablespoons confectioners’ sugar

    Juice of half a lemon

    OR...

    Ingredients (8” pan, serves 1)

    1/6 cup all-purpose flour

    ¼  cup whole milk

    1 eggs, lightly beaten

    Pinch of nutmeg

    2 tablespoons unsalted butter

    1 tablespoons confectioners’ sugar

    Juice of ¼ lemon

    Directions

    Heat oven to 425 degrees. 

    Combine the flour, milk, eggs, and nutmeg in a bowl. Beat lightly. Leave the batter a little lumpy. 

    Melt the butter in skillet with a heatproof handle. When it is very hot, pour in the batter. Bake for 15 to 20 minutes, until the pancake is golden brown. 

    Sprinkle with the sugar and return briefly to the oven. 

    Sprinkle with lemon juice, and serve with jelly, jam, or marmalade.
