Your cook is beautiful but I believe those are plate ribs not back ribs.

I always thought plate ribs have 3 bones, chuck ribs have 4 bone and back ribs resemble baby back ribs.

Plate ribs have 3 bones, short ribs have 4, beef back ribs look more like pork ribs - bunch of bones...
    Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

They look like short ribs that have been separated on each bone. They look great.

@Mattman3969 Those ribs look delicious. I’ve never cooked beef back ribs. You make me want to change that.

@SciAggie - thank you. Good meaty back ribs are hard to find around here but are a great treat when you do.  3:15hr cook will provide great eats.  Not quite Plate rib good but still better than pork ribs in my opinion.

One of my favorite cooks.  And yes beef back ribs exist everywhere.  If not stand-alone, then just grab a beef rib roast and carve off the ribs...beef back ribs are now yours.
Great cook right there, as always.  Nailed that cook. You have a nice source as the challenge is to find them without shiners.
As noted, beat their pork cousins every time.

I have been a Pork baby back rib eating fool for years. Every time I cook beef ribs, I question my previous reasoning for sure.

Beautiful cook Matt. Great results. Great presentation.

The only way I can get beef back ribs is to buy a rib roast and cut them off. Just did a four bone and ended up with nine rib eye steaks and the four bones. Four bones is enough for the the wife and me but due to the current situation my daughters have moved back home with their boyfriends in tow. I'm going to have to buy a lot more roasts before I have enough to feed six!
