Beef Tenderloin

Thankful that we’re not personally affected by illness at present, however..... disappointed that we had to scrap 2 trips including cancellation of the kid's national swim meet. Along with other countless disruptions to work and life ... this has been an interesting week. 

What better time to open a $200 bottle of wine I got for my birthday a few years ago!  Paired with beef tenderloin seasoned with Holy Cow rub. Seared in cast iron in WFO then finished on the egg at 250 indirect until 135 IT.  Sautéed creamed mushrooms and some asparagus. Soldier on people!

    Nothing special. Sautéed over high heat with butter and olive oil. Caramelized and added a little cream.

    I'm a recent convert to Holy Cow. I used it for my last two cooks.

    Question: why did you cut the tenderloin into two pieces? I've cooked it twice but always done it whole. Thanks.

    EDIT: Reading is fundamental. Cast iron in WFO.
