Pork Tenderloin and Cheesy Cauliflower

Got a 2 pack of pork tenderloin from Costco. Cooked it raised direct at 425 turning every 5 minutes until it reached 140 about 35 minutes. Let it rest 15 minutes and sliced. Cauliflower was bleached and then mixed in with a rue using butter, almond flour, whole milk, sharp cheddar, mozzarella, cholula hot sauce, salt, pepper and mustard powder. Sauce to cauliflower was a little off but man was it good.

Ha! I was curious about bleaching cauliflower too... thanks for the clarification! However you got there it looks great!

What did you stuff them with? If not stuffed, what is the purpose of the string?
Just curious as I am always looking for different ideas of what to stuff pork tenderloin with. Have tried goat cheese and spinach with good results and ham, dijon mustard and swiss cheese with mixed results as a "Cuban" attempt.

@keener75 they are not stuffed. The reason for tying is uniformity. Since tenderloins have a skinny end I fold it over and tie so they cook more evenly.
