Last night we went to see TSO...it was a blast. We didn’t get home until 1:30am, and I hoped to set the fire and get a butt on around 4am. Well I somehow managed to over sleep...didn’t wake up until 5:30am. In a panic I went out and fired up the grill and got it settled in at 225. I tossed on the butt for a few hours (5ish), then pulled it off wrapped it and cranked up the temp to 350ish. The finished butt was very good, I love @Nature Boy /DizzyPigs WonderBird on pork. Here are a few pics of the finished butt...all and all we had a great day celebrating Christmas with the family(wife had to work Christmas Day).

I would say it turned out well. TSO is a favorite of my wife’s and I try to take her every couple years. Their show doesn’t change much year to year, but they do find a way to amp up the live fire and showmanship.
