OT: Just got a Santa Maria Grill

Just got a Santa Maria Grill and did my first cook last night -- Santa Maria tri tip over coastal red oak. It turned out really well, but I've got a good amount to learn about cooking over live fire. If anyone has one of these and can throw me some tips, I'd appreciate it! It's an amazing new toy and a great addition to the egg. Can't wait to have both roaring at once!

Congrats! Those things are all over the place around Vandenberg AFB (Santa Maria and Lompoc) and tri-tip seems to be the local specialty. No idea how to run one, but enjoy!

That is very cool! I'd really like to play with one of those. I think you could reverse sear by simply adjusting the height (distance). That could be handy. Raising the grate so its at a 'roasting point' for corn on the cob or potatoes or other sides while the protein comes up to temp. Pulling the sides, lowering the grate and searing. Enjoy!!
