I need a deer jerky marinade and deer stew recipe please!

10-year-old fanboy jr killed his first deer last weekend. want to use some of the meat for jerky this weekend and some for a stew one cold weekend

any and all tips welcome!

    Brother I know you asked for a marinade and not a spice, but you owe it to yourself to try this one for venison. It is all I have used for the past 10 years for venison jerky. The only draw back is the pack is for large quantities so you have to measure it out if you are doing small batches. Try it my friend. You will become a believer. It’s the best I have ever had.

    If you notice the writing on the bottom of the bag says “Blend #131” be sure that is the one you get. All the bags look the same so it’s easy to accidentally grab the wrong one.

    I don't mind a rub like this. Do any stores sell? I see it is pretty cheap, under $6, but then shipping is more than the rub by a couple dollars

    I do not know where you live but in my neck of the woods you can buy it at Piggly Wiggly. Also a lot of independent butcher shops use Leggs products. Sometimes they will sell you smaller amounts.

    Can’t go wrong with Legg’s Old Plantation. Southern staple. You should be able to find it at Reed‘s, IGA or Food Lion. For the stew, checkout MeatEater’s recipes. Lots of wild game stuff with that guy. Cool Netflix show too.

    BottleLiquid smoke
    1/2cupWorchestershire sauve
    1/4cupSoy sauce
    1/2cupBrown Sugar
    1/4cupSalt
    1 1/2TBSGarlic salt
    2TBSBlack pepper (mild) or 3 =HOT
    1tsponion powder
    1/4tspCajun seasoning
    2cupswater

    The above makes one batch (1/4 deer) of jerky.  I cut up the meat into strips, then pounded with a serrated mallet.  Breaks up the fiber and lets the meat absorb the liquid. The above liquid and deer meat fills up a large 1 gallon glass pickle jar. Let soak overnight in refrigerator. DISCARD the liquid the next day (do not reuse-its nasty) and squeeze out the excess liquid before dehydrating. The jerky will fill 2- 1 gal zip lock bags from this batch.  Our KS deer were pretty large, and you end up with 8 zip locks of jerky that can be frozen. 

    I did 8 deer with this recepe, and everyone in our club loved it.

  • @SGH how do you use this jerky seasoning? As a wet marinade or dry seasoning? I’m doing a batch now . Did a wet marinade but I see there are options here.
