Lamb Birria Tacos

As I find myself in the early throws of what feels to be a fairly decent cold, I have no appetite and hadn't eaten all day. I decided to try my hand at making some birria tacos using some of the oak and cherry smoked lamb trotter meat from the stew I made earlier, in the hopes that it would pack enough flavor for me to be able to taste something.
The meat was reheated and shredded and some corn tortillas were dipped in the braising liquid and then fried in dry aged lamb fat on a cast iron flat top.
The tortillas were topped with a generous amount of freshly shredded Monterey Jack cheese and several dollops of meat.
The tacos were topped off with finely diced onions and cilantro.
Can't go wrong with a quick order of tacos for dinner. Very tasty. Hopefully I'll start to feel better soon as I had plans to cook something new this weekend.
