What Should I Experiment with Pork Butt?

Doing a high quality 4# pork butt tomorrow, I've done a bunch of methods, and have a high quality piece of meat from a local producer. I want to "test" the quality of the meat, what do you recommend to do?

I don’t know how to test the quality of a pork butt as such, but look up David Chang’s bo ssam. Not hard, and it’s different.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX.

I'm with @caliking regarding "testing the quality" but if it is high quality I would cook like I do every other butt (unless going cuban) and see if I can tell any difference in taste or texture. That said, mo-jo pork is another great variation from the "norm." Here's a link:Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
