real texas chili

so dad wanted real chili with beans and tomatoes for the pats game.   so, if we are breaking the rules, i made it with chicken and sweat potatoes =)

    good, and too easy with a crock pot.  tomatos, peppers, and arthritist dont go well together so i know he is in pain today, but he wanted it for the game. its loaded up with cayennes out of the garden so it has some heat.  to bad the scorpions and ghosts arent ripe

    As soon as I read, "dad wanted real chili with beans", I knew all the Texans were going to come for you, lol.  It does look tasty, though, I too would skip the beans.
    It's "Smokin Gal", not "Smoking Al".

    this is my too hot for texans chili....yankee chili.  this is the one i cook when i want hot

    dry peppers
    5 habaneros
    3 passilla 3 california
    3 ancho
    3 gaujillo
    3 de arbol
    remove stems.  simmer in beer 1 hour
    peppers seeds ribs and all into food processor then added to seared 3.5 pounds beef cubes

    saute
    5 jalepinos
    3 seranos
    2 hungarians
    1 red bell
    1 onion
    5 cloves garlic

    herbs and such
    2 tbls oregano
    3 tbls cumin
    1 tbls onion powder
    2 tbls paprika
    1 tbls salt
    2 tbls masa harina

    into the mix with 2 quarts beef stock for three hours did i break any rules no darn beans, no darn tomatoes


    but this ones just good portuguese chili from before texas was even texas

    Molha à la mode de Pico

    marinate overnight

    2 lbs chuck, cut into bite-size cubes
    5-6 garlic cloves, crushed or minced
    1 Tbsp red pepper flake, this is subbing in for piripiri
    2 Tbsp Kosher salt

    saute

    2 Tbsp olive oil
    1 large onion, chopped
    3-4 garlic cloves, chopped

    then everything in with the following

    1 Tbsp tomato paste
    1-2 c. white wine and/or stock
    1 tsp allspice
    1 bay leaf
    1/2 tsp cumin
    1 cinnamon stick

    serve over boiled potatoes

    I’m confused. But i get confused easily. 
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now).
