    Simply fantastic. Thank-you so much for taking us along for the ride. 

    I quit trying to smoke brisket after a dozen or so disasters and one or two so-so results. Your huge win has inspired me to get back on the horse. 

    On a side note, @lousubcap - Thanks for your suggestions to @Zamfir. I learned a lot.

    That is an awesome first brisket right there! For future reference, not sure where you got this particular beast but the trim on it was a bit goofy. The part I circled is actually not part of a brisket. It’s meat from the neck area. It’s common to have a little on there but I have never seen this much left on. Best to trim that off and grind it up for burgers or something like that. I circled the part in red so next time you’ll know.

  • interesting on the neck part.  Maybe that is why I was so confused on cutting it apart..lol.  We picked some chunks of that neck part off and ate it before I trimmed it.  It was all barked up and was still damn yummy.  I hope this one was not a fluke.  we will see next time I try it..Cause I damn sure am.  lol.
