Freezer Diving Tuna n Pasta

A few weeks ago I bought some Yellow Fin Tuna but didn’t get to cook it. It got vac sealed and frozen. I thawed it out for tonight’s supper. But what to serve with it. I had no rice, no capers and no salad but I had leftover pasta, fresh cherry tomatoes,kalamata olives, a lemon and an herb garden
Worried about the texture of frozen YFT I hit it with salt n pepper then a SV bath @105 for 30mins.
While the SV was doin it’s thing I sautéed some garlic, tomatoes, kalamata olives and lemon juice before adding the pasta and fresh thyme and rosemary
Missed the pan pic. Oh Well.
Tuna hit with black n white sesame seeds

Searing up on the mini.

Served on a bed of the pasta mix and a sprinkle of fresh thyme. I think the freezing messed with the color of the tuna. This is the darkest 105° I’ve seen on tuna.

For a hodgepodge meal this did not disappoint.

I think this pasta hodgepodge will be good with some buttery seared scallops too. Time will tell
