Sunday wings...

Options
Morning All:

Did a few wings yesterday...put 52 brined drums/flats on at dome temp of 240 with some cherry chunks for smoke...let the temp rise slowly for a couple hours to 375-400 then went another 20-30 minutes to fully crisp...used five different rubs...on the bottom layer is Dizzy Pig Shaking the Tree & Meat Church Honey Bacon BBQ...on the top level is DP Pineapple Head, DP Mediterranean-ish & DP Peking...


Wings are done...


NO leftovers...4 adults & 4 children finished all of them (this included the 10-month old granddaughter eating at least two wings, small bites from dad while "complaining" that he wasn't feeding her fast enough)…
