My take on the “ultimate appetizer” and ABT mix. Candied bacon for dessert.

My wife had some friends over and they were having meatball sandwiches and a salad.  I took this opportunity to use some stuff I had I had and I made a variation of the “ultimate appetizer” but put it in a poblano pepper then wrapped it all in bacon. I also a little pecan smoke on them as well. 
(The two without bacon were for the vegetarian.  It was a vegetarian meatball smashed into the poblano. )

Not bad at all.




I also made some candied bacon, but no pictures while it was on the grill.  Been a while since I did this. No idea why I do not do it more often.

    They make vegetarian bacon, but I have no idea whether it's worth eating, or whether it would work at all if you tried to wrap it around something and put it on the smoker.

    But what a great idea on the appetizer!  I've been meaning to try @SGH's appetizer, just haven't gotten at it, yet, but it sure sounds good.  But putting it in the poblanos sounds like a great idea!

    @Theophan. You should try it. It is ridiculously easy and delicious. I mixed sausage, onion, crackers, cheese and a half egg and used that as the filling. Then filled the poblano. 
    My wife who loves both that app and ABTs (but thinks jalapeños are too often too hot for her) loved the poblanos.  She said you get the best of both apps in one.

    That really does sound great.  They'd be kinda big appetizers, though.  Sometimes I've made ABTs and sliced them into sections that were easy to stick with toothpicks for one bite.  Do you think that would work with these?
  • Nice idea!  I don’t know if SWMBO would go for the ultimate appetizer from a 9x13 pan, but I’m pretty sure she’d be game for it if it was a stuffed poblano!

    @Theophan I do not think so.  We ended up eating 1 whole pepper each.  Poblanos do not hold that much. For the 8 halves, I used 1/2 lb of sausage, about 10-12 crushed crackers, some cheese and 1/2 egg.  Without doing complicated math, it was about 1 medium sized meatballs worth of the app in each half of pepper.  We ate them with a fork and knife.  

    You could probably cook them like this, then slice each half into 4 slices across their width and then stick in a toothpick before presentation.  The filling is pretty firm - it will not fall apart and out.  Hmmmm. Talking about this now makes me think this is not a bad idea.
