Porchetta on the large
Butterflied a small pork loin and seasoned with lemon zest, rosemary, garlic, s&p and onion powder. Rolled into a whole costco pork belly. Spinning at 325 with lump to one side.

Took it off when the center hit 150. Rested for 45 min and sliced for plates and chopped for sandwiches. Juicy and tender. Skin could have been crispier if I let it dry out in the fridge longer or covered it in more salt. 2 1/2 hour total cook time. -
Pork loin and belly was from Costco.
