Old-School Chicken and Sausage Jambalaya

I first got the idea for Donal Link's Old-School Chicken and Sausage Jambalaya here from a post by @Srf_in_Dfw.
This is my third time making the dish. I've got family in town and this was the finale meal. It is definitely an involved meal, I spent about 3 hours yesterday doing prep work and another 3 hours today making the jambalaya. It was salty, spicy, and satisfying.

I asked my brother his favorite of the four meals I made: smash burgers, carne asada tacos (SRF Black), Spatchcocked Chicken, and Jambalaya. His choice: jambalaya.

I was requested last week to make jambalaya, and I did, for my daughter heading up coast to go to college. CA State Santa Cruz. Now I've been informed that I'm to make gumbo next Wednesday. My wife and I went to NOLA 25 yrs ago and I knew I had to figure out how to cook this stuff because it's not available here I SoCal.
