Smoked Cobia belly?

i know this is a stretch but has anyone ever done this? I caught some nice Cobia and was told that I have to smoke the belly, because it’s the best meat on the fish. Anyone?
I'm in Fredericksburg, VA, and I have an XL and a medium.

  • Never had it smoked but Cobia filets are excellent.

Why don’t you smoke it all and then let us know what part of the fish is the best?  I bet it will all be good.  I am guessing the belly has a higher fat content which makes it especially good

We usually sear Ling steaks. Never had the belly meat. Delicious piece of fish though

I fish a bit here and there and I never smoke fresh fish. When that fresh, I let the freshness shine through.
At the same time, maybe I might be missing something....
While we do get cobia is up here on occasion, they are not that common. Great catch!

If if you give a smoked belly a try, let us know how it worked out for you.

Not a a ton of help, but had cobia collar recently and damn was it good! I’m sure whatever you do with your fresh cobia will be great!

My problem is: I’m allergic to fish, so I don’t eat it. I’m trying to cook something that I’ve never had and have no idea what it tastes like. My wife and kids love fresh fish and I can eat shellfish, so I normally eat scallops. I’ve caught and cooked Cobia before for them, but the belly thing is new. I’d never heard of it
