Peruvian chicken recipe?

Does anybody have a good Peruvian chicken recipe?  Had some for the first time today and liked it. I have a bottle of dizzy pig peruvianish that I’m itching to try. Is it as simple as season and grill?  Any kind of marinade or injection?  The place I was in had a giant rotisserie going and they were cooking over Fogo lump charcoal.

This is my go to meal. Green sauce is so good with the chicken and about anything else you want to dip it in

Raichlen's is excellent, with green sauce as well. It's online BBQ bible and video from one of his project shows. Easy and delicious
