Tribute Cook to a friend gone too early

One of the things that most impressed me about @bgebrent cooks, well Nichole cooks, was how he absolutely killed seafood. He was always rolling out amazing looking fish, scallops, shrimp, etc. That is what we discussed more on the egg than anything - seafood.
As good as he is with it, I am equally poor/intimidated. We recently had been talking about Shrimp Brochette. We had several messages back and forth, and I just never executed it.
Well this weekend seemed as good as any time to get it done:
Parcooked the bacon in a pan until it just started to get a little color.
Marinated the shrimp in a mix of olive and canola oil, white wine, equal parts Everglades fish seasoning, and Hardcore Carnivore Meatchelada seasoning.
Wrapped shrimp, pepper jack cheese, and jalapeno slice in bacon.
Onto the a 375ish Egg for 10-15mins.
Finished.
Not bad for a first effort, but I learned some lessons. The shrimp were big ones U13-15, so I need to use 3/4 to a full slice of bacon. Half didn't quite work out that well. I'd also add some rub to wrapped bacon, etc to add some more flavor.
And the plating/pics are a mess. I was well into a full LEO at the time and am happy I was able to get some documentation.
Might have to file this one under the learn from it tab and it's the thought that counts.
I just wish I did this before he left us.
