APL Asian Pork Meatball Skewers

It's the weekend so it's my turn to cook dinner. I decided to make APL's Asian Pork Meatball Skewers.

I used my pizza steel at about 400F with some butter and toasted sesame oil. The secret is to press down on the meatballs to form them into a sort of cube. This gets more crust on the outside of the meatball versus a sphere.

After one flip.

First batch done with the sear. Second batch on.

After the sear, put the meatballs straight onto the grid. Hit 'em with the glaze. Pro tip: clean and oil the grid to prevent sticking.

Nearly finished plate. Hit with a bit of diced scallions, sesame seeds, some lime juice and serve with rice and lettuce wraps.
I ate four skewers, probably about a pound of pork. They were amazing.

Here's the recipe. Enjoy and let me know if you make them.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"
